Millets are ancient grains like foxtail, pearl (bajra), finger (ragi), kodo and barnyard. They’re packed with fibre, protein and essential minerals, and are naturally gluten‑free and low on the glycaemic index.
To cook millets, rinse them thoroughly and optionally soak for about 30 minutes. Use a 1:2 ratio of millet to water; bring to a boil, then simmer until the water is absorbed. Let them rest and fluff with a fork for light, separate grains. Toasting dry grains briefly in a pan brings out a nutty aroma.
You can use cooked millets in dishes like ragi idli, ragi dosa, jowar muffins, ladoos and more. They’re quick to prepare and an environmentally friendly alternative to polished grains.
